Mezcals represent a diverse and traditional category of Mexican agave spirits known for their artisanal production and distinctive smoky character. While tequila is a type of mezcal made specifically from Blue Weber agave in designated regions, mezcal can be crafted from many different agave varieties, most commonly Espadin, and is primarily produced in Oaxaca along with several other Mexican states.

Traditional mezcal production follows ancestral methods that shape its bold and complex profile. Mature agave hearts are roasted in underground earthen pit ovens, which impart the signature smoky depth. The cooked agave is then crushed, naturally fermented in open vats, and distilled in small copper pot stills or clay stills depending on regional tradition. The result is a spirit layered with notes of roasted agave smoke earth citrus herbs and subtle sweetness, often reflecting the terroir of its specific village and agave varietal.
